Assistant Bar Manager — Cavita, Marylebone

Cavita is looking for an Assistant Bar Manager to join our bar team in Marylebone.

We’re looking for an experienced, hands-on bartender and natural leader who is excited by ambitious drinks, great hospitality, and the energy of a busy London bar.

Our bar is a little different. Downstairs, we have a speakeasy-style cocktail bar with a strong focus on agave spirits, particularly mezcal, alongside creative cocktails and a programme that involves plenty of pre-batching, preparation and molecular gastronomy techniques. Upstairs, the pace changes — our bar works alongside food service requiring speed, precision and excellent communication with the wider restaurant team.

As Assistant Bar Manager, you’ll work closely with the Bar Manager to run both sides of the operation, maintaining high standards while helping lead and develop the team.

The role

You’ll be expected to be a visible, hands-on presence on the bar, supporting the team through service while also taking responsibility for the standards behind the scenes.

Your responsibilities will include:

• Supporting the Bar Manager with the day-to-day running of the bar
• Leading and motivating the team during busy services
• Maintaining consistently high standards of cocktails, preparation and presentation
• Overseeing pre-batches, infusions, preparations and other elements of our drinks programme
• Working confidently with mezcal, tequila and the wider world of agave spirits
• Helping maintain our recipes, prep systems and quality-control standards
• Managing service across both the downstairs cocktail bar and upstairs fast-dispense operation
• Working closely with the kitchen and front-of-house teams to deliver smooth food and drink service
• Supporting training, onboarding and development of bartenders
• Helping manage stock, ordering, wastage and bar organisation
• Ensuring excellent standards of cleanliness, safety and organisation
• Stepping up and taking responsibility for the bar in the Bar Manager’s absence

What we’re looking for

We’re looking for someone who has solid experience in a quality cocktail-bar environment and is ready to take the next step in their career.

You’ll ideally have:

• Previous experience as a bar supervisor or assistant bar manager
• A strong technical understanding of cocktails and modern drinks preparation
• A genuine interest in agave spirits and mezcal
• Experience with batching, prep-heavy cocktail programmes and/or modern cocktail techniques
• The ability to stay organised and calm in a high-pressure service
• Strong leadership and communication skills
• A hands-on attitude — you’re happy jumping behind the bar and leading from the front
• A strong understanding of hospitality and guest experience
• Good commercial awareness around stock, wastage and margins
• The confidence to work across both a creative cocktail environment and a high-volume service

Most importantly, we’re looking for someone who is curious, driven and passionate about bars, with the personality and leadership skills to bring a team with them.

Pay: £45,000.00-£47,000.00 per year
