Assistant Commissary Manager

About the role

You will assume full operational responsibility in the Commissary Manager's absence and assist in planning and supervising daily operations. This role is central to maintaining efficient stock management, inventory control, and production workflows in a cloud kitchen environment.

Key responsibilities

• Assume full operational responsibility in the Commissary Manager's absence; assist in planning and supervising daily operations
• Monitor stock levels, conduct inventory counts, enforce FIFO/FEFO, coordinate replenishment, and maintain accurate logs in Excel/Google Sheets
• Track output vs. targets, identify bottlenecks, monitor yield/waste, and prepare efficiency reports
• Receive and inspect deliveries, organize and store stock properly, issue stock to production stations
• Maintain spreadsheets for stock, wastage, and production data; flag discrepancies to the Manager

About you

• College graduate of Culinary Arts, Food Technology, or related course
• Experience in commissary, central kitchen, or warehouse stock/inventory role
• Proficient in Excel and Google Sheets (formulas, pivot tables, reporting)
• Working knowledge of stock control, FIFO/FEFO, and production workflows
• Strong attention to detail, reliability, and ability to step into a managerial role when needed
• Flexible with shifts
• Experience in a HACCP or GMP compliant site (nice-to-have)
