Assistant Manager – GARS No. 19, Brighton

GARS has been part of Brighton’s dining story since 1983, and now it’s being reimagined.

We serve cocktails, speciality wines, and small plates that give traditional Chinese cooking a modern twist. The room is intimate and low-lit, the evenings are lively, and it’s a date-night spot people remember. Simplicity meets tradition.

We’re hiring an Assistant Manager to help lead the restaurant from opening.

The role

• Support the General Manager in running day-to-day operations across floor and bar
• Lead shifts with confidence, setting the tone for warm, polished service
• Train, motivate and develop front of house and bar staff
• opening and closing procedures, cash handling and stock checks
• Handle guest feedback and resolve issues calmly and professionally
• Uphold standards in presentation, service, health and safety, and licensing

You’ll bring

• Supervisory or assistant management experience in a quality restaurant or bar
• A natural leader who leads from the floor and brings energy to service
• Strong organisation and attention to detail
• Confidence with rotas, cashing up and basic stock control
• A passion for food, wine and cocktails
• Availability across lunches, evenings and weekends

Opening hours: Mon–Thu 12pm–9:30pm | Fri–Sat 12pm–10pm | Sun 12pm–9pm
Pay: £14 per hour + Tronc
