BAKER – JOB DESCRIPTION

1. Production & Baking

• Prepare and bake products according to recipes and SOP (bread, laminated dough, pastry, etc.)
• Ensure consistency in taste, texture, and appearance
• Handle daily production based on order volume (B2B / retail)
• Operate baking equipment (oven, mixer, proofer, sheeter)

2. Preparation & Mise en Place

• Weigh and prepare ingredients accurately
• Manage dough preparation, fermentation, and proofing process
• Follow production timeline (cut-off order, delivery schedule)

3. Quality Control

• Maintain product quality standards at all times
• Check freshness, shelf life, and product condition
• Minimize waste and report any production issues

---

4. Hygiene & Safety

• Maintain cleanliness of workstation and kitchen area
• Follow food safety and hygiene standards (FIFO, labeling, storage)
• Ensure equipment is used and cleaned properly

5. Inventory & Stock Control

• Monitor ingredient stock levels
• Inform supervisor for restocking needs
• Assist in stock count and waste control

6. Team Collaboration

• Work closely with head baker / senior baker
• Communicate production issues or delays
• Support team during peak production

---

7. Efficiency & Cost Awareness

• Follow recipe to maintain target food cost
• Avoid overproduction and unnecessary waste
• Work efficiently to meet deadlines

Basic Requirements

• Experience as baker / pastry (min 1–2 years preferred)
• Understand basic baking techniques (fermentation, proofing, lamination is a plus)
• Able to work early shifts / long production hours
• Detail-oriented & consistent
• Team player, willing to learn
