Banquet Beverage Mgr

JOB SUMMARY:

The Banquet Beverage Manager is responsible for the proper operations of all banquet and catering beverage related activities that take place at the hotel, convention center and attractions complex. This includes the staffing, issuing, service operations, breakdown, controls and proper billing of all catered beverage activities.

POSITION AUTHORITY:

The incumbent is authorized to take reasonable action necessary to carry out assigned duties and responsibilities, provided such action is consistent with position guidelines as outlined below.

POSITION GUIDELINES:

Position guidelines include, but are not limited to, established company and department policies and procedures and all supervisory directives. The incumbent is expected to exercise sound, reasonable judgment and initiative, and give high priority to accuracy and details in the performance of job responsibilities.

ESSENTIAL FUNCTIONS:

• Maintain pars, controls and procurement procedures for the banquet beverage storeroom

• Responsible for the proper cleanliness and appearance of the banquet beverage storeroom with a FIFO basis of inventory control

• Oversee the set-up, display, service and product quality of all banquet bars including the staffing, training, uniform , appearance and supervision of bar service staff

• Responsible for the proper completion of bar consumption paperwork and the preparation of all bar checks

• Ensure that all consumed beverages are properly accounted for and that consumed items are properly posted to the banquet check

• Ensure the proper pouring controls of all bar staff to SOP’s

• Ensure the proper documentation for cash bars and strict ticket reconciliation to consumption

• Improve the merchandising and selling of cash bars

• Work with the F&B Director to properly set pricing levels and pouring recommendations for all banquet beverage pricing

• Review all BEO’s each week to identify bar needs and coordinates ordering with Purchasing Manager

• Ensure that all special banquet wines are ordered timely and as needed

• Work with MIS to ensure that Micros is properly functioning for proper accounting of cash bar activities

• Work with the F&B Director and Banquet Manager to look at ways we can enhance the look and functionality of beverage and bar presentations

• Assertively manage payroll to keep payroll within guidelines

• Audit all bar staff Kronos activity and correct as necessary

• Assist with the servicing of banquet functions as directed and needed by Banquet Manager and F&B Director

• Troubleshoot Micros as needed and directed by F&B Director

• Schedule and maintain attendance records for bartenders

• Responsible for staffing events with the appropriate number of staff members for the size and scope of the event

• Any and all other duties as assigned; duties are subject to change as management deems necessary to best serve the needs of Moody Gardens

EDUCATION/ EXPERIENCE REQUIREMENTS:

• At least two years beverage management experience in a hotel or restaurant setting required.
• Any combination of education, training, or experience that provides the required knowledge, skills, and abilities
• High school diploma required
• Must obtain TABC & Food Handlers Certification prior to beginning work
• Must possess a valid Driver’s License

REQUIRED SKILLS:

• Must be reliable and responsible
• Ability to do basic math necessary to count money
• Ability to use a ten key pad calculator

PHYSICAL REQUIREMENTS:

• Ability to work in a confined space
• Ability to stand, walk, sit, bend and lift for continuous periods of time
