Banquet Chef

Overview

The Banquet Chef is responsible for assisting the Executive Chef in overseeing daily food production while ensuring exceptional quality and consistency for both on-premise and off-premise events specifically Retreat Centers and all contracted reoccuring business. This role combines kitchen production, menu execution, event leadership, and culinary creativity. The ideal candidate is organized, thrives in a fast-paced environment, and is comfortable leading teams both in the kitchen and at off-site events. This candidate will ideally have ordering and inventory experience, production knowledge and leadership skills to produce successful events.

What You'll Do

• Lead kitchen production for contracted business and Retreat Center plus support daily operations in coordination with Executive Chef.
• Prepare and execute high-quality food for retreat center, boat tours, weddings, corporate, social and catered functions on and off premise.
• Lead kitchen staff in prep, production, and service as well as be able to produce meals with heavy dietary restrictions and guidelines.
• Maintain quality standards in recipes, portioning, and presentation.
• Manage production timelines to meet multiple deadlines.
• Supervise the packing, loading, and organization of food and equipment for off-site catering events and contracted deliveries.
• Travel to off-site events as needed to oversee food quality, execute service, plate meals, carve stations, and assist with event setup and breakdown.
• Support menu development, tastings, and seasonal offerings.
• Ensure food safety and sanitation compliance.
• Assist with inventory management, purchasing, and waste control.
• Train, coach and mentor culinary team members while promoting a positive team environment.

What You'll Bring

• 3+ years of culinary experience in high-volume catering, banquet, restaurant, or hospitality environments.
• Previous supervisory or leadership experience preferred.
• Strong knowledge of food production, banquet service, and catering operations.
• Experience executing plated dinners, buffets, cocktail receptions, and wedding service.
• Excellent organizational and time-management skills.
• Ability to multitask and prioritize multiple events simultaneously.
• Strong communication and leadership abilities.
• Valid driver's license with an acceptable driving record.
• ServSafe Certification preferred or ability to obtain.

Schedule Expectations

This position requires a flexible schedule based on business needs, including:

• Evenings, weekends, and holidays.
• Early morning production shifts as required.
• Off-site weddings, festivals, corporate events, and catered functions.
• Driving deliveries when needed based on business
• Participation in client tastings, menu development sessions, and special culinary events.
• Extended shifts during peak catering and wedding/holiday seasons.

Pay: $23.00 - $27.00 per hour
