What You'll Be Doing

Member Experience & Hospitality

• Deliver an exceptional and personalised beverage experience that exceeds guest expectations.
• Build meaningful relationships with guests, anticipating their preferences and creating memorable experiences.
• Confidently recommend cocktails, wines, spirits, and pairings that complement our culinary offerings.
• Ensure consistently warm, attentive, and professional service throughout every shift.
• Lead by example on the floor, maintaining a visible presence during service.

Beverage Programme & Innovation

• Develop and continuously evolve the brands cocktail, wine, spirits, and non-alcoholic beverage programme.
• Curate seasonal beverage menus and signature cocktails that reflect our identity and dining experiences.
• Work closely with the Chefs and Marketing team on beverage pairings, promotions, and events.
• Stay ahead of industry trends while introducing innovative yet commercially viable beverage concepts.

Operations & Commercial Performance

• Oversee all daily bar operations to ensure consistency, efficiency, and exceptional quality.
• Establish and maintain SOPs, recipes, service standards, and presentation guidelines.
• Manage beverage costing, gross profit margins, inventory control, stock rotation, and purchasing.
• Analyse sales performance and implement initiatives to drive beverage revenue and profitability.
• Build and maintain strong relationships with suppliers while sourcing premium products and negotiating favourable commercial terms.
• Ensure full compliance with food safety, hygiene, licensing, and workplace safety regulations.

Leadership & Team Development

• Train, mentor, and develop a passionate, knowledgeable, and high-performing bar team.
• Foster a positive culture built on teamwork, accountability, professionalism, and continuous learning.
• Conduct regular coaching sessions, tastings, performance reviews, and skills development programmes.
• Collaborate closely with restaurant, kitchen and events teams to deliver seamless guest experiences.

Business Growth

• Support events, private functions, activations, and large-scale events by delivering exceptional bar operations and creative beverage experiences.
• Provide operational leadership and hands-on support for wider club events, working collaboratively with cross-functional teams to ensure seamless execution and an outstanding guest experience.
• Identify opportunities to enhance operational efficiency, optimise service workflows, and continuously elevate the overall bar offering.
• Contribute innovative ideas and initiatives that strengthen the brand's reputation.

We're Looking for Someone Who

• Has 5–7 years of progressive experience in bar operations, including proven success as a Bar Manager or Senior Bar Leader within luxury hotels, premium restaurants, private members' clubs, or other upscale hospitality venues.
• Demonstrates exceptional knowledge of cocktails, premium spirits, wines, champagne, and emerging beverage trends.
• Has a strong understanding of beverage costing, inventory management, budgeting, and P&L performance.
• Thrives in a fast-paced, service-driven environment while maintaining composure and attention to detail.
• Has excellent communication and interpersonal skills with the confidence to engage with discerning members and guests.
• Is highly organised, commercially minded, and committed to operational excellence.
