Position Summary

The Bar Manager is responsible for overseeing the daily operations of the bar, ensuring exceptional guest experiences, maintaining high beverage quality standards, driving revenue, and leading the bar team. This role ensures compliance with company policies, food safety and hygiene regulations, and licensing requirements while creating a fun, social, and engaging atmosphere that reflects the Mad Monkey brand.

Key Responsibilities

Operations Management

• Manage the day-to-day operations of the bar.
• Ensure smooth opening and closing procedures.
• Maintain high standards of cleanliness, organization, and presentation.
• Ensure compliance with company SOPs, health, safety, and sanitation regulations.
• Monitor guest satisfaction and resolve complaints professionally.

Team Leadership

• Recruit, train, supervise, and develop bartenders and bar staff.
• Prepare staff schedules based on business needs.
• Conduct regular coaching and performance evaluations.
• Foster a positive, inclusive, and high-performing team culture.
• Lead by example and maintain excellent service standards.

Beverage & Menu Management

• Develop and update cocktail and beverage menus.
• Ensure consistency in drink preparation and presentation.
• Monitor beverage quality and portion control.
• Introduce seasonal promotions and signature cocktails.
• Work closely with suppliers to source quality products.

Inventory & Cost Control

• Conduct regular inventory counts.
• Monitor stock levels and place orders when required.
• Minimize wastage through effective stock rotation and portion control.
• Investigate inventory discrepancies and implement corrective actions.
• Manage beverage cost and maintain target profit margins.

Financial Responsibilities

• Monitor daily sales performance.
• Analyze revenue and identify opportunities to increase sales.
• Ensure accurate cash handling and POS transactions.
• Prepare operational reports for management.
• Support budgeting and cost-control initiatives.

Guest Experience

• Create a welcoming, energetic, and memorable atmosphere.
• Engage with guests and encourage positive social experiences.
• Promote special events, happy hours, and bar activities.
• Handle guest feedback promptly and professionally.

Health, Safety & Compliance

• Ensure compliance with local alcohol licensing regulations.
• Maintain hygiene standards in accordance with food safety requirements.
• Ensure all team members follow responsible alcohol service practices.
• Maintain valid hygiene documentation and support government inspections when required.

Collaboration

• Coordinate with the Kitchen, Front Office, Events, and Operations teams to ensure seamless guest experiences.
• Support hostel events and entertainment activities.
• Participate in management meetings and contribute operational improvements.

Qualifications

• Minimum 3 years of experience in bar operations, with at least 1 year in a supervisory or management role.
• Previous experience in hospitality, hostels, hotels, or restaurants.
• Strong knowledge of cocktails, spirits, wine, beer, and beverage service.
• Experience with inventory management and cost control.
• Excellent leadership and communication skills.
• Strong problem-solving and conflict-resolution abilities.
• Fluent in English; additional languages are an advantage.
• Comfortable working evenings, weekends, and public holidays.
