What they need
Bar Manager – Mayflower Restaurant & Bar
Location: 1 Commercial Road, Southampton, SO15 1GF
Job type: Full-time, in person
Hours: Minimum 45 hours per week
Pay: £13.50
Mayflower Restaurant & Bar is looking for an experienced Bar & Restaurant Manager to lead our team and take responsibility for the daily running of our venue.
With post-show bookings of more than 150 guests, we need someone who can organise a busy service, deploy the front-of-house team effectively and ensure every guest receives excellent service. You should be comfortable leading from the floor, making decisions under pressure and keeping the team focused and motivated.
You will have practical support from management to help you succeed, alongside the opportunity to shape how the bar and restaurant operate.
Your responsibilities will include:
- Managing daily bar and restaurant operations, ensuring the team is prepared for each service.
- Coordinating the bar, floor and kitchen so orders are taken accurately and food and drinks reach guests promptly.
- Managing stock, suppliers and purchasing: knowing what to order, where to source it and when to replenish it.
- Monitoring stock levels, deliveries, costs and wastage to keep the venue well supplied and operating efficiently.
- Preparing cocktails, developing clear recipes and training staff to deliver consistent drinks, presentation and service.
- Coaching the team, setting clear expectations and checking that every member understands their responsibilities.
- Resolving customer concerns and operational problems calmly and professionally.
- Overseeing opening and closing procedures, cash handling, cleanliness and responsible alcohol service.
To succeed in this role, you must have:
- At least 5 years’ experience managing large, busy bars and restaurants, with responsibility for both staff and service.
- Proven experience managing large bookings and concentrated rushes while maintaining service standards.
- Strong leadership, organisation and problem-solving skills, with the ability to make confident decisions under pressure.
- Excellent customer service skills and a welcoming, professional approach.
- Strong cocktail knowledge, including recipes, preparation techniques and the ability to train others.
- Practical knowledge of supplier sourcing, ordering, stock control and cost management.
- Availability for a minimum of 45 hours per week, including evenings and weekends as required.
We offer:
- Free meals on shift.
- Incentives and additional perks, with details discussed at interview.
- Flexible rota planning around the needs of the business and team.
- Supportive management committed to helping you succeed.
- The opportunity to make a meaningful contribution to the venue, develop the team and improve the guest experience.
If you have the experience to lead a busy bar and restaurant and take pride in delivering excellent hospitality, we would love to hear from you.
Apply with your CV and a brief summary of the venues you have managed, the teams you have led and your experience handling busy services and large bookings.
