We are looking for an experienced and creative Bar Manager to lead our complete bar operations and build a premium beverage experience at SOMARA.

Job Responsibilities

• Take complete responsibility for the day-to-day bar operations.
• Lead, train and manage bartenders, mixologists, barbacks and bar support staff.
• Develop and maintain SOMARA's cocktail, beverage and bar menu in coordination with management.
• Create innovative signature cocktails and beverage experiences aligned with SOMARA's brand.
• Ensure consistency in taste, presentation, recipe and portion size for every beverage.
• Establish standard recipes, preparation methods, measurements and presentation guidelines.
• Train bartenders on cocktails, spirits, wines, beers, mixers, garnishes and service standards.
• Ensure proper mise-en-place and bar readiness before every service.
• Manage bar opening and closing procedures.
• Monitor beverage quality and ensure all products are served according to established standards.
• Maintain complete control over bar inventory, stock levels and product movement.
• Conduct regular stock counts and identify discrepancies, wastage, breakage or potential pilferage.
• Maintain proper storage of alcoholic and non-alcoholic beverages.
• Work closely with the Purchase and Accounts teams for procurement and vendor management.
• Monitor beverage cost, pour cost, wastage and profitability.
• Ensure accurate portioning and standardised pouring.
• Develop strategies to increase beverage sales and average order value.
• Train the service team to effectively recommend and upsell beverages.
• Coordinate with the kitchen for bar food pairings and special events.
• Maintain high standards of bar cleanliness, hygiene and organisation.
• Ensure compliance with applicable liquor licensing, legal and safety requirements.
• Handle guest feedback related to beverages and resolve issues professionally.
• Plan beverage promotions, tasting events and special cocktail programmes.
• Coordinate bar operations for private parties, corporate events and special occasions.
• Monitor staff attendance, grooming, discipline and performance.
• Prepare daily/weekly bar reports and inventory reports for management.

Pre-Opening Responsibilities

The Bar Manager will play an important role in SOMARA's pre-opening phase:

• Develop the initial bar menu.
• Create signature cocktails and beverage recipes.
• Prepare standard recipe and costing sheets.
• Finalise bar equipment and smallware requirements.
• Assist in bar layout and workflow planning.
• Identify and coordinate with beverage suppliers.
• Establish inventory and stock-control systems.
• Recruit and train the bar team.
• Conduct beverage tasting and testing sessions.
• Establish bar SOPs.
• Train staff on recipes, service and responsible alcohol handling.
• Conduct mock service and trial runs.
• Ensure the bar is fully operational before opening.

Candidate Profile

• 5–10 years of relevant bar/hospitality experience.
• Previous experience as Bar Manager / Assistant Bar Manager / Head Bartender / Beverage Manager.
• Experience in premium restaurants, restrobars, luxury hotels or high-volume bars preferred.
• Strong knowledge of cocktails, spirits, wines, beers and beverage operations.
• Strong understanding of beverage costing, inventory control and stock management.
• Proven experience in cocktail/menu development.
• Excellent leadership and team-management skills.
• Strong guest-handling and communication skills.
• Knowledge of applicable liquor laws and responsible alcohol service.
• Creative, commercially aware and detail-oriented.
• Ability to work under pressure during high-volume service.
• Hospitality Management / Bartending certification preferred.

We are looking for a hands-on Bar Manager who can combine creativity with strong operational and commercial discipline.

The ideal candidate should be able to create exceptional cocktails while also maintaining strict control over inventory, costing, wastage, recipes and profitability.

You will be responsible for making the SOMARA bar a destination in itself while ensuring every drink is delivered with consistency and professionalism.
