At the center of the guest experience is Flaggerdoot, our signature cocktail bar where creativity, sustainability, and storytelling converge.

Our cocktail program is intentionally designed around rotating, theme-led menus exploring concepts such as alchemy, fermentation, and native botanicals. Ingredients are thoughtfully sourced from the estate and trusted local producers. The department is led by Food & Beverage Director Tanguy Charbonnet (Australian Bartender of the Year 2025), the program is built on deep product knowledge, ongoing training, and a commitment to sustainability in every detail.

We are seeking an experienced and motivatedBartender to help deliver an exceptional, world-class guest experience.

Key responsibilities:

• Prepare and serve a variety of alcoholic and non-alcoholic beverages according to recipes
• Engage with customers to take orders and provide recommendations based on their preferences
• Maintain cleanliness and organisation of the bar area, ensuring compliance with health and safety regulations
• Run food and beverages to guests and maintaining a strong presence on the floor
• Provide excellent customer service, addressing any customer inquiries or concerns promptly
• Collaborate with other staff members to ensure smooth operation during busy periods

About You:

• You are a confident hospitality professional who thrives in high-end, fast-paced environments and takes pride in delivering memorable guest experiences.
• Two years of previous bartending experience
• Strong knowledge of spirits, cocktails and contemporary bar techniques
• A genuine passion for guest experience and attention to detail
• Flexible availability, including weekends and public holidays
• A valid RSA (Responsible Service of Alcohol) certification is required
