Barsella is a new upscale Italian restaurant and cocktail room on SMU Blvd, opening in December.

You run the well from 4pm to 2am. We open with dinner service, spritzes, wine, classics, the drinks that go out with the food. At 10pm the room rolls into a late-night lounge, more people, more movements, more drinks. That's your main event. Our strongest hours are 7pm to 2am — the wells get slammed, the night gets loud, and that's where your money is.

On your shift, the bar is yours and you set the tempo and the vibe. You know our cocktails by heart. The bar is the first thing a guest sees and the first thing they notice when you’re buried. You’re fast normally, and faster under pressure. When it's 2am and the rail is full, the drink is still right, that's what we get credit for.

What we actually care about: you can read a room. You treat the bar like a craft and the guests like regulars, precise and confident, easy to talk to without letting the conversation slow the tickets. You'd rather be moving than standing around. When something goes sideways, you fix it in front of the guest instead of hiding it, because a guest who watches you handle a mistake walks out trusting you more, not less.

The rest we'll teach. Build specs, pour standards, the full menu, wine. We're not a family, but we will treat you professionally and with respect. Management has worked on the floor for years and understands where the job actually gets done. We want our people to get better, not just get by. Frequent tasting and training, so you get sharper and faster. If you want to actually get good behind a serious bar, this is the room to do it in.

The facts of the job:

• Wage // 2.13 an hour plus tips
• Schedule // Shifts from 3pm-9pm, shifts from 9pm-2am + close.
• Rail // 19 seats.
• 2% tip-out only to barback.
