Reports To: Production Supervisor / Factory Manager

Rate of Pay: £40,000-£55,000 per annum. Depending on experience

Purpose of Role

To prepare, cut, trim and portion fish products safely and efficiently while maintaining quality, yield, food safety and customer specifications.

Key Responsibilities

• Process whole fish into fillets, portions, steaks and other product formats.
• Trim products to specification, removing bones, skin and defects where required.
• Maximise yield while maintaining quality standards.
• Carry out quality checks on raw materials and finished products.
• Ensure customer specifications are followed accurately.
• Maintain high standards of hygiene and food safety.
• Operate knives and processing equipment safely.
• Follow HACCP, GMP and company procedures.
• Report quality, safety or equipment issues to supervisors.
• Assist with stock rotation and raw material control.
• Complete production records as required.

Skills and Experience

• Experience in fish processing, butchery or food production preferred.
• Good knife skills.
• Ability to work accurately to specifications.
• Understanding of food safety and hygiene requirements.
• Ability to work in a fast-paced production environment.
• Good attention to detail.

Qualifications

• Food Hygiene Certificate (desirable).
• HACCP awareness (desirable).
• Manual handling training (desirable).

Physical Requirements

• Standing for extended periods.
• Repetitive manual tasks.
• Lifting and handling fish products and boxes.
• Working in chilled environments.
