About Us

Pablo Eggsgobao started as a lockdown pop-up in Heaton in 2020 and has grown into one of the North East's most recognisable food brands. Our signature breakfast baos have built a devoted following across Newcastle, Sunderland, Edinburgh and Whitley Bay, and we now operate six sites with an ambitious franchise expansion underway—including two franchise locations preparing to open.

We're proud of what we've built, and we're determined to protect it as we grow. The success of Pablo's has come from consistency—the same quality, the same welcome, the same experience whether you're in Whitley Bay or Edinburgh. As we scale, maintaining that consistency across every site and every franchise partner is our biggest challenge and our biggest priority.

The Role

We're seeking a Brand Standards Manager to be the guardian of the Pablo's experience across all locations. This is not a traditional marketing role—it's about embedding our standards into daily operations, ensuring every bao that leaves our kitchens and every interaction at our counters reflects what Pablo's stands for.

You'll work closely with our founders, kitchen teams, front-of-house staff and franchise partners to translate what makes Pablo's special into clear, practical standards that can be maintained as we grow. You'll need to understand our brand instinctively—not just how it looks, but how it feels and why customers keep coming back.

This is a hands-on role. You'll spend time in our sites, not just behind a desk.

Key Responsibilities

• Develop and maintain comprehensive brand standards covering food quality, presentation, customer service and site appearance
• Conduct regular site visits to audit standards, identify inconsistencies and work with teams to address them
• Support new site openings and franchise launches by embedding brand standards from day one
• Train kitchen and front-of-house teams on brand expectations, ensuring new staff understand not just what to do but why it matters
• Work with franchise partners to ensure they have the tools and knowledge to deliver the Pablo's experience consistently
• Act as the point of escalation when standards slip, working constructively with site managers to resolve issues
• Monitor customer feedback and reviews to identify patterns affecting brand perception, and drive corrective action
• Refine and update brand guidelines as the business evolves, ensuring they remain practical and relevant
• Champion our values of creativity, quality and community across every touchpoint

About You

Essential:

• Deep understanding of the Pablo Eggsgobao brand—what we serve, who we serve, and what makes us different
• Experience in a hands-on operational role, ideally within food service or hospitality
• Proven ability to maintain and improve standards across multiple locations or teams
• Strong practical knowledge of kitchen operations and/or customer-facing service
• Excellent communication skills with the ability to influence and motivate teams at all levels
• Meticulous attention to detail and a natural instinct for spotting when something isn't right
• Ability to work independently and manage your own schedule across multiple sites
• Full UK driving licence (regular travel between sites required)

Desirable:

• Experience supporting franchise operations or new site openings
• Familiarity with our existing sites and teams
• Food hygiene or similar relevant qualifications
