Butcher

Overview
We are seeking a Butcher to be responsible for preparing, cutting and presenting high-quality meat products whilst maintaining the highest standards of food safety, hygiene, and customer service. You will possess great technical skills with clear product knowledge and play a key part in ensuring customers receive fresh, well-prepared, and attractively displayed meat at all times.

Duties

1. Meat Preparation & Cutting

• Prepare, trim, debone, and portion meat according to specifications and customer needs.
• Operate knives and cutting equipment safely and efficiently.
• Ensure all cuts meet quality, consistency, and presentation standards.

2. Product Quality Control

• Inspect meat upon delivery for freshness, quality, and compliance with standards.
• Rotate stock to maintain freshness and reduce waste.
• Identify and remove any products that do not meet safety or quality requirements.

3. Customer Service

• Assist customers with selecting cuts, portion sizes, and cooking recommendations.
• Provide expert knowledge on meat varieties, preparation methods, and alternatives.
• Handle customer requests and special orders professionally and efficiently.

4. Merchandising & Display

• Arrange meat displays to maximise appeal and drive sales.
• Label and package products accurately with pricing, dates, and descriptions.
• Maintain well-stocked, clean, and visually appealing counters.

5. Food Safety & Hygiene

• Follow all food handling regulations and internal hygiene procedures.
• Keep work areas, tools, and equipment clean and sanitised at all times.
• Store and refrigerate products according to temperature and safety guidelines.

6. Inventory & Stock Management

• Monitor stock levels and report shortages or ordering needs.
• Assist with receiving and processing deliveries.
• Reduce waste through proper trimming, portioning, and stock rotation.

7. Equipment Maintenance

• Safely operate and maintain cutting tools, grinders, saws, and other machinery.
• Perform routine cleaning and checks to ensure equipment is functioning correctly.
• Report any faults or safety hazards promptly.
• Operate knives and cutting equipment safely and efficiently.
• Ensure all cuts meet quality, consistency, and presentation standards.

Key Skills

• Safely operate and maintain cutting tools, grinders, saws, and other machinery.

• Meat cutting, trimming, deboning, and portioning across various meat types.
• Strong knowledge of food safety regulations, HACCP standards, and safe knife-handling practices.
• Ability to operate butchery equipment such as slicers, saws, grinders, and vacuum sealers with confidence.
• Excellent customer service skills with the ability to advise customers on cuts, preparation methods, and cooking techniques.
• Strong attention to detail with a commitment to quality, consistency, and presentation.
• Ability to handle heavy lifting, long periods on your feet, and manual tasks.
• Ability to work efficiently in a fast-paced environment while maintaining hygiene and safety standards.
