Butcher/Meat Specialist

About the role

DOEUN, a Modern Korean Fine Steakhouse in Menteng, Jakarta, is looking for an experienced butcher who understands premium meat, precision, hygiene, and professional kitchen standards.

Key responsibilities

• Portion and prepare premium beef, pork, poultry, and seafood according to DOEUN standards
• Perform trimming, deboning, cutting, slicing, and portion control accurately
• Manage dry-aged and water-aged meat products
• Monitor meat quality, yield, storage conditions, labeling, and product rotation
• Maintain strict hygiene, sanitation, and food-safety standards
• Minimize waste and support food-cost control
• Coordinate daily requirements with the Executive Chef and kitchen team
• Maintain butcher equipment, knives, workstations, and cold-storage areas

About you

• Minimum 2–3 years of experience as a butcher, meat cutter, or similar position
• Strong knowledge of beef and pork cuts
• Experience handling premium meat is preferred
• Understanding of dry-aging and meat maturation is an advantage
• Precise, disciplined, physically fit, and highly attentive to cleanliness
• Able to follow standardized portioning and yield-control procedures
• Willing to work shifts, weekends, and public holidays
• Based in or willing to commute to Menteng, Central Jakarta
