Captain Waiter

About the role

Wet Plate Kitchen is seeking an experienced Captain Waiter to join our hospitality team in Bali. This is a contract position that offers an excellent opportunity to lead and manage dining service operations in a dynamic, customer-focused environment. As Captain Waiter, you will be at the forefront of guest experience, overseeing table service, coordinating with kitchen and bar staff, and ensuring exceptional standards are maintained throughout every service.

Key responsibilities

• Lead and supervise dining service operations, ensuring all guests receive attentive, professional and courteous service
• Manage table assignments, seating arrangements and service flow to optimise guest satisfaction and operational efficiency
• Train, mentor and guide junior waitstaff and supporting service personnel on service standards and procedures
• Take food and beverage orders accurately, with knowledge of menu items, specials and pairing recommendations
• Liaise effectively between guests, kitchen staff and management to address any service issues or special requests promptly
• Monitor table service during all meal periods, ensuring plates are cleared appropriately and glasses remain filled
• Maintain exceptional standards of cleanliness, presentation and etiquette in the dining area
• Handle guest complaints with professionalism and discretion, seeking resolution in line with company policy
• Assist with pre-service and post-service duties, including table setup, stock management and closing procedures
• Maintain knowledge of current promotions, menu changes and beverage selections to enhance guest recommendations

What we're looking for

• Can join immediately
• Minimum 3-5 years' experience as a waiter or captain waiter in a hotel, restaurant or upscale dining establishment
• Proven ability to lead and motivate junior staff members in a fast-paced service environment
• Excellent knowledge of food and beverage service standards, protocols and etiquette
• Strong communication skills with the ability to interact professionally with guests from diverse backgrounds
• Outstanding customer service orientation with a genuine commitment to exceeding guest expectations
• Ability to remain calm, organised and composed during peak service periods
• Proficiency in point-of-sale (POS) systems and reservation management software
• Fluency in English required; additional languages such as Indonesian or Mandarin are advantageous
• Physical ability to stand for extended periods and carry items safely during service
• Flexibility to work varying shifts, including evenings, weekends and public holidays as required
