Job Purpose

The Captain Waiter is responsible for supervising the daily service operation within the assigned outlet or dining area, ensuring excellent customer service, efficient coordination of the service team, proper food and beverage presentation, and compliance with company standards, food safety requirements, and hygiene procedures.

The Captain Waiter acts as a key link between the service team, kitchen, management, and customers, ensuring that operations run smoothly and professionally.

Key Responsibilities1. Customer Service

• Welcome and assist customers in a friendly and professional manner.
• Ensure customers receive prompt, accurate, and courteous service.
• Take and coordinate customer orders accurately.
• Respond to customer questions regarding menu items, ingredients, allergens, and available options.
• Handle customer concerns professionally and escalate issues to management when required.
• Monitor customer satisfaction throughout the service period.

2. Team Supervision

• Supervise waiters, servers, and service staff during assigned shifts.
• Allocate staff to service stations and ensure all areas are adequately covered.
• Brief the team before each service regarding menus, promotions, special requirements, and operational instructions.
• Monitor staff performance, appearance, punctuality, and adherence to company procedures.
• Support and coach junior service staff when required.
• Ensure proper communication between the front-of-house and kitchen teams.

3. Food & Beverage Service

• Ensure food and beverages are served according to company presentation and portion standards.
• Check orders before they are served to customers.
• Coordinate closely with the kitchen to ensure orders are prepared and delivered on time.
• Monitor buffet, counter-service, table-service, or catering service areas as applicable.
• Ensure tables, counters, serving areas, and customer areas remain clean and organized.
• Assist with setting up and closing the service area.

4. Food Safety & Hygiene

• Follow and enforce company food safety and hygiene procedures.
• Ensure proper personal hygiene and grooming standards are maintained by all service staff.
• Monitor correct handling of food, beverages, utensils, and service equipment.
• Ensure allergen information is communicated accurately to customers and staff.
• Report any food safety, hygiene, equipment, or pest-control concerns immediately to management.
• Follow HACCP and applicable local food safety requirements.

5. Cash & POS Responsibilities

• Ensure customer orders are entered accurately into the POS system where applicable.
• Support cashier operations during busy periods when required.
• Verify orders, payments, discounts, and staff benefits according to company procedures.
• Report any discrepancies or POS issues to the supervisor or manager.
• Ensure customer receipts are provided where applicable.

6. Stock & Equipment

• Monitor service equipment, crockery, cutlery, glassware, trays, and other operational items.
• Report damaged, missing, or malfunctioning equipment.
• Assist in maintaining adequate service supplies during operations.
• Avoid unnecessary wastage and ensure company property is handled responsibly.

7. Opening & Closing Duties

• Assist with opening the outlet/service area according to the daily checklist.
• Ensure tables, counters, service stations, and equipment are properly prepared before service.
• Complete closing procedures, including cleaning, storage, stock checks, and securing service areas.
