India's most authentic New York–style sandwich operation is searching for a kitchen head with precision and high attention to detail.

Kitchen Operations & Speed of Service:

• Lead daily lunch and dinner rushes.
• Ensure high food throughput, strict ticket-time goals, and smooth line flow.
• Work the line or step into any station (prep, grill, assembly) during peak hours or staff shortages.
• Coordinate between morning & evening prep shift and equipment usage schedules.

Quality & Consistency Control:

• Standardize recipes, portion sizes, and hold times to match brand specifications across every order.
• Conduct regular line-checks and taste-tests of sauces, proteins, and sides before service starts.

Labor & Team Leadership:

• Lead by example and coach team members on speed, knife skills, safety, hygiene and kitchen etiquette.
• Constant product knowledge acquisition, dissemination and training.

Food Safety & Compliance:

• Enforce food safety standards, logs, and inventory rotation.
• Maintain clean, inspection-ready kitchen conditions.

Inventory & Cost Management:

• Track daily and weekly food and paper costs (COGS).
• Manage ordering, vendor deliveries, stock counts, and waste tracking to hit target food-cost percentages.

Menu Execution & R&D Support:

• Observe stock expiration; test and roll out weekly or seasonal specials.
• Translate complex culinary techniques into repeatable, high-speed processes for unskilled staff.

Pay: ₹30,000.00 - ₹60,000.00 per month
