Job Description

Manifest Hospitality is seeking a skilled and passionate Chef de Partie (CDP) to join the culinary team at our Italian restaurant in Colaba, Mumbai. The ideal candidate will have strong knowledge of Italian cuisine, excellent cooking skills, and the ability to independently manage an assigned kitchen section while maintaining high standards of food quality, consistency, hygiene, and presentation.

The candidate should be a team player with strong organisational skills and the ability to deliver exceptional food quality in a fast-paced restaurant environment.

Key Responsibilities

• Manage and oversee the day-to-day operations of the assigned kitchen section.
• Prepare and execute Italian dishes in accordance with established recipes and restaurant standards.
• Demonstrate strong knowledge of Italian cuisine, including pasta, sauces, risotto, pizza, and other relevant dishes.
• Ensure consistency in taste, portion control, food quality, and presentation.
• Supervise and guide Commis chefs and other junior kitchen staff within the assigned section.
• Ensure proper mise en place and readiness before every service.
• Maintain high standards of food safety, hygiene, sanitation, and kitchen organisation.
• Monitor ingredient quality, stock levels, and food storage procedures.
• Minimise food wastage and maintain effective portion control.
• Coordinate with the Sous Chef, Head Chef, and other kitchen sections to ensure smooth service.
• Assist with menu development, dish trials, and the implementation of new recipes when required.
• Follow standard operating procedures and ensure compliance with kitchen policies.

Requirements

• 3–5 years of experience in a professional kitchen, preferably with experience in Italian cuisine.
• Strong knowledge of Italian cooking techniques, pasta preparation, sauces, risotto, and relevant kitchen operations.
• Previous experience managing a kitchen section and guiding junior team members.
• Good understanding of food costing, portion control, inventory management, and waste reduction.
• Strong organisational skills and the ability to work efficiently under pressure.
• Excellent attention to detail, consistency, and food presentation.
• Knowledge of food safety and hygiene standards.
• Good communication, teamwork, and leadership skills.
• Flexibility to work shifts, weekends, and public holidays as required.
