About the role

Ton & Co is a Japanese Tonkatsu specialist located in Windsor / Prahran area. We are looking for an experienced Chef to lead the kitchen in accordance to the company's menu and standards.

Key responsibilities

• Preparation before service and cooking during service
• Monitor the quality and presentation of dishes throughout preparation and service to ensure consistency with the restaurant's standards
• Demonstrate food preparation and cooking techniques and provide guidance and training to junior kitchen staff
• Liaise with the Head Chef / management regarding food preparation, menu development, stock requirements and kitchen operations
• Stock checking
• Maintain upkeep of the kitchen with assistance from other team members
• As we are a small team, to rotate in roles which includes cleaning and assisting in dishwashing as necessary

About you

• Possess intimate knowledge regarding pork / meats and meat conditions and be able to identify meat conditions (e.g. PSE & DFD meat conditions)
• Have an understanding of the process of brining / curing / resting meats to improve meat quality prior to cooking
• Have an understanding of Japanese cuisine in terms of preparing dashi, sauces, etc and be able to identify nuances in different ingredients, brand of products, etc
• Experience in crumbing ingredients to professional Japanese standards will be a big advantage
• Have experience in achieving target temperatures for meats and seafood
• Have an understanding and knowledge in upkeep of kitchen hygiene, managing systematic risks, storage temperature requirements, etc
• Existing full-time working rights will be required

Ton & Co is a Japanese Tonkatsu specialist located in Windsor / Prahran area. We are a small team and kitchen with a small menu, but execution must be to a high standard. We are located near public transport (train & tram), private parking is also available if necessary.
