Chef de partie (CDP)

About the role

Gyu-kaku is a premium Japanese BBQ brand with international standards. we are seeking for a CDP with strong character, high discipline, and a solid commitment to excellence, to join our professional kitchen team.

Key responsibilities :

1. Execute all recipes and procedures strictly following the SOP
2. Ensure accurate and timely reporting of daily, weekly, and monthly kitchen data
3. Control food cost through accurate portioning, minimal waste, and proper inventory usage
4. Discipline in recording and reporting all kitchen activities
5. Foster a high performing and disciplined kitchen team
6. Communicate clearly with management regarding kitchen operations and improvement points
7. Control food cost through accurate portioning, minimal waste, and proper inventory usage
8. Maintain food quality, consistency, hygiene, and platting standards
9. Train and mentor junior kitchen staff regularly, reporting for KPI

Requirements :

1. Minimum 3 years of experience as a Chef de Partie, experience in Japanese cuisine or hotel kitchen is a strong advantage
2. Strong understanding of kitchen operations, inventory management and production planning
3. Excellent leadership, teamwork, high personal integrity and communication skill
4. Commited to SOP, hygiene and food safety (HACCP)
5. Strong attention to detail and the ability to work well under pressure
6. Good character : honest, respectful, responsible and dependable
