Chef De Partie - Job Description

Main Duties:

• Prepare, cook and present dishes from your section to recipe, portion and quality standards, including regional Andhra specialities (e.g. dum biryani, Hyderabadi and Andhra curries, tandoor items).• Prepare masalas, marinades, gravies, spice blends and sauces in-house using traditional methods.• Supervise and train commis chefs and kitchen assistants working in your section.• Manage mise en place and stock levels for your section; order within agreed budgets and flag shortages.• Check incoming deliveries for quality, quantity and correct storage.• Keep portion control and minimise waste to protect food cost targets.• Follow food safety (HACCP), allergen and labelling procedures; keep temperature and cleaning records.• Maintain a clean, safe station in line with Environmental Health standards.• Cover dine-in, takeaway and delivery orders, keeping ticket times and consistency across peak periods.• Work with the Head Chef on menu development, specials and seasonal dishes.• Report equipment faults and health and safety issues promptly• Cover other sections when needed.

Requirements:

• 2 to 3 years commercial kitchen experience in Indian cuisines• Good knowledge in food health and safety requirements• A team member, able to help other when required• Good command of English

Pay: £32,000.00-£34,000.00 per year
