Full-Time Chef de Partie

Hours: 35–40 hours per week, with potential for additional hours

Pay: £13.5-£14/ hour (plus tips)

Location: Hoiana Restaurant, Leeds

Hoiana is a Vietnamese restaurant looking for a reliable, organised Chef de Partie to join our kitchen team. You will take responsibility for our pho and starters section, including daily preparation, broth preparation, sauces and service.

Your responsibilities

• Prepare pho broth, proteins, noodles, garnishes and other ingredients following our recipes.
• Prepare and cook starters, maintaining consistent taste, presentation and portion sizes.
• Make homemade sauces and dipping sauces to our agreed standards.
• Plan daily preparation so your section is fully stocked and ready for service.
• Run your section independently during busy service, coordinating with the rest of the kitchen.
• Monitor stock, rotate ingredients correctly and communicate shortages.
• Maintain food hygiene, allergen procedures, safe storage and a clean, organised workspace.
• Keep waste under control and support other kitchen sections when needed
• Help train junior team members on your section as required.

What we’re looking for

• Previous experience as a Chef de Partie or an experienced line chef ready to take responsibility for a section.
• Confidence with preparation and cooking in a busy restaurant kitchen.
• Good organisation, attention to detail and consistent cooking standards.
• Someone dependable who takes ownership of their section and works well with the team.
• An interest in Vietnamese food and willingness to learn our recipes.
• Availability for a rota that includes evenings and weekends.

Experience with Vietnamese or other Asian cuisine is welcome, but we can teach our recipes to someone with strong kitchen skills and the right attitude.
