What they need
- Prepare and cook Chinese dishes according to standardized recipes and quality standards.
- Handle various Chinese cooking techniques, including wok cooking, steaming, braising, roasting, and stir-frying.
- Ensure proper preparation, portioning, seasoning, and presentation of all dishes.
- Monitor food quality, freshness, taste, and consistency before service.
- Supervise and guide Commis Chefs and other junior kitchen staff assigned to the section.
- Assist the Sous Chef and Executive Chef in daily kitchen operations.
- Ensure proper mise en place and readiness before each meal period or service.
- Maintain cleanliness and organization of the assigned kitchen section.
- Follow proper food safety, sanitation, and HACCP standards.
- Monitor stock levels and report shortages or required ingredients to the Sous Chef.
- Minimize food waste and ensure proper storage and rotation of ingredients using the FIFO method.
- Ensure proper use, cleaning, and maintenance of kitchen equipment and utensils.
- Assist in developing new Chinese dishes and improving existing menu items.
- Coordinate with other kitchen sections to ensure smooth and timely food service.
- Follow all hotel policies, kitchen procedures, and health and safety regulations.
- Perform other duties and responsibilities that may be assigned by the Sous Chef, Executive Chef, or Management.
