• Oversee and manage daily kitchen operations in the Chinese kitchen, ensuring high standards of food safety, hygiene, and sanitation (HACCP).
• Collaborate with the Executive Chef to develop, create, and standardize recipes, presentation styles, and food costs for Chinese menus.
• Monitor the quality, taste, and freshness of all Chinese ingredients to meet hotel standards.
• Manage inventory, place orders, and minimize food waste to control kitchen costs.
• Train, mentor, and evaluate the performance of kitchen staff (Cooks and Commis).
• Schedule shifts and maintain overall cleanliness and order within the kitchen premises.
