Job Title: Commis 1 – Pastry

Reports to: Demi Chef de Partie – Pastry / Chef de Partie – Pastry

Job Summary The Commis 1 – Pastry is responsible for assisting in the preparation and production of

pastry and bakery items under the supervision of senior pastry chefs. This role requires

precision, attention to detail, and a strong interest in pastry arts, contributing to the smooth

and creative operation of the pastry kitchen.

Key Responsibilities

• Assist in preparing pastry components such as sponge cakes, mousses, tart bases,

glazes, icings, and fillings.

• Follow recipes, portion sizes, and presentation standards as directed by the Pastry

CDP or Sous Chef.

• Help with the production of breads, viennoiserie, plated desserts, and decorative

elements.

• Maintain a clean and organized workstation in accordance with food safety and

hygiene standards (HACCP). Assist with daily mise en place and ensure all items are

properly labelled and stored.

• Operate pastry equipment (mixers, ovens, sheeters, etc.) safely and correctly.
• Monitor ingredient levels and report shortages or spoilage.
• Support and cooperate with all sections of the pastry kitchen during service.
