Commis Chef

LiTO celebrates Italian-inspired dining with bold flavours, quality ingredients and a lively atmosphere, while Haven captures the essence of the coast with fresh local produce, seafood and a laid-back approach to beachside luxury.

We are seeking an enthusiastic and motivated Commis Chef to join our culinary team at Mondrian Gold Coast on a part-time basis, supporting the delivery of exceptional food across our distinctive dining venues.

Main Responsibilities

• Assist with the preparation, cooking and presentation of dishes to a high standard, under the guidance of the Executive Chef and senior chefs.
• Support all areas of the kitchen across breakfast, lunch, dinner and events, including buffets and live cooking stations.
• Maintain food safety, hygiene and HACCP standards, including stock rotation and daily record-keeping.
• Assist with deliveries, stock levels and minimising waste.
• Help induct new team members and support apprentices.
• Assist the Food & Beverage team with guests’ dietary requests.

Requirements

• Previous experience in a commercial kitchen, restaurant or hotel environment.
• Completed or currently undertaking a Certificate III in Commercial Cookery (or equivalent) is desirable.
• A genuine passion for food and a willingness to learn and develop your culinary skills.
• Basic cooking skills and an understanding of kitchen procedures, food safety and hygiene.
• Ability to work in a fast-paced kitchen while maintaining attention to detail and high standards.
• Good time management, with the ability to follow instructions and prioritise tasks during busy service periods.
• Strong communication skills and a collaborative, team-focused attitude.
• A positive attitude, reliability and a commitment to quality.
• Availability to work a flexible part-time roster, including mornings, evenings, weekends and public holidays.
• Must have valid Australian working rights.
