Commissary Manager

About the role

Metro Retail Stores Group, Inc. is seeking a dedicated and experienced Commissary Manager to join our team in Cebu City, Cebu. This is a full-time position that plays a crucial operational role in managing our commissary facilities and ensuring the seamless supply of products to our retail locations. As Commissary Manager, you will oversee the daily, high-volume operations of the bakeshop and distribution facility and all aspects of commissary operations, from inventory management and food safety compliance to staff supervision and vendor relations. This role is essential to maintaining the efficiency and quality standards that define Metro Retail Stores Group, Inc., and directly impacts the success of our retail operations.

Key responsibilities

• Oversee daily commissary operations, including receiving, storage, preparation and distribution of products to retail locations
• Manage inventory levels, conduct regular stock audits and implement effective inventory control systems to minimize waste and optimize stock rotation
• Ensure strict compliance with food safety regulations, hygiene standards and company policies across all commissary operations
• Supervise and train commissary staff, including scheduling, performance management and fostering a culture of excellence and accountability
• Coordinate with vendors and suppliers to negotiate contracts, manage delivery schedules and maintain quality standards of incoming products
• Monitor and control commissary costs, prepare budget reports and identify opportunities for operational efficiency and cost savings
• Maintain accurate documentation and records including inventory logs, staff timesheets and compliance certifications
• Conduct regular quality checks on prepared items and ensure all products meet company and regulatory standards before distribution
• Implement and maintain equipment maintenance schedules to ensure all commissary equipment operates safely and efficiently
• Liaise with retail store managers to understand product requirements and ensure timely and accurate order fulfilment

What we're looking for

• Proven experience as a Commissary Manager or similar operations management role within the hospitality, retail or food service industry
• Strong knowledge of food safety protocols, health and hygiene regulations, and inventory management best practices
• Demonstrated ability to manage budgets, control costs and improve operational efficiency
• Excellent leadership and team management skills with the ability to motivate and develop staff
• Strong organizational skills and attention to detail, with the ability to manage multiple tasks simultaneously
• Proficiency in inventory management systems and basic computer skills (Microsoft Office or similar)
• Excellent communication and interpersonal skills, with the ability to liaise effectively with staff, vendors and retail partners
• Problem-solving mindset with the ability to identify issues and implement practical solutions
• Physical capability to perform regular inspections and monitor commissary activities
• Certification in Food Safety Management or relevant qualifications is highly desirable
