Complex Executive Chef

Food is one of the strongest ways we tell our guests who we are. As Complex Executive Chef, you will write the culinary story for two resorts, from restaurant menus to banquets, and lead the kitchen teams that bring it to life with discipline, creativity, and care.

Job Summary

Set the culinary direction for both resorts: menus that reflect the Florida Keys, kitchens that run clean and consistent, and food cost and labor held on target.

What You'll Do

Including but not limited to:

• Create seasonal menus that reflect place, guests, and brand standards
• Lead the executive sous chef and sous chef across both kitchens
• Order and produce to the forecast; own food cost, purchasing, and waste reduction
• Keep both kitchens food-safe and inspection-ready
• Build culinary talent and a clear path for cooks to grow

What You Bring

• 10+ years in professional kitchens, with 5+ years in executive or multi-outlet leadership
• Strong menu development, menu costing, and food cost control
• ServSafe Manager certification or equivalent
• Experience running banquet production at volume
• Forecasting and critical thinking, with the discipline to cost every menu and hold food cost to plan
• A coaching style: you taste everything, cost every menu, and build cooks who are proud of the plate
• Restaurant and bar experience preferred
• Experience in upscale or full-service resort hospitality, including Hilton or Marriott, preferred
