Job Duties:

• Fryer Management:
  • Conduct fryer safety procedures, including cold starting and filter maintenance.
  • Set fryer temperatures (330°F for chicken and fish, 350°F for side fryers).
• Marination Process:
  • Prepare marination by mixing marination mix, salt, water, and ice in designated tubs.
  • Schedule draining and completion times for marination.
• Fryer Designation for Food Safety:
  • Manage specific fryer duties, including load quantities, cook times, and stirring intervals.
• Filter Maintenance:
  • Sift flour before and after every load of chicken and after every two tenders.
  • Change filters every two loads for fryer and grease maintenance.
• Grease and Side Fryer Management:
  • Change side fryers after lunch and dinner rushes.
• Product Marination:
  • Marinate tenders, chicken, livers/gizzards, and fish following specific procedures.
• Batter Process:
  • Prepare batter by adding batter mix and cold water to the batter pan.
  • Monitor and change batter as needed.
