Prep Cook – LTD Reserve Kitchen

Thomas Hammer Coffee Roasters is hiring a Prep Cook to join the kitchen team at our flagship LTD Reserve on Spokane’s South Hill.

This is a 40 hour per week position, typically 5 shifts per week, with shifts scheduled between early morning opening and early afternoon based on business needs. Weekend availability is required as needed.

Position Overview

This role supports the kitchen from opening through lunch service by preparing food from scratch, stocking and maintaining deli cases, supporting active service, and keeping the kitchen clean, organized, and operating efficiently.

The ideal candidate is experienced in a commercial kitchen, works with urgency and accuracy, and can prioritize tasks independently in a fast-paced environment.

Responsibilities

• Prepare menu items and scratch ingredients according to recipes and specifications
• Portion, chop, prep, and store food for breakfast and lunch service
• Set up and restock deli cases, drive-thru food items, and grab-and-go offerings
• Support breakfast-to-lunch changeovers and maintain food presentation throughout service
• Monitor food temperatures, sanitation standards, and product quality
• Communicate outs or urgent prep needs with kitchen and front-of-house teams
• Wash dishes and maintain clean, organized workstations throughout the shift
• Complete daily cleaning, including equipment, prep stations, floors, and dish area
• Help leave the kitchen clean, stocked, and ready for the next shift

Qualifications

• Previous kitchen experience required (prep cook, line cook, baker, or similar)
• Strong knife skills and understanding of basic cooking methods
• Ability to read and follow recipes accurately
• Comfortable working with commercial kitchen equipment, including gas appliances, griddles, ovens, and prep equipment
• Able to multitask, stay organized, and work independently without constant supervision
• Comfortable working in a fast-paced kitchen environment

Preferred:

• Experience with combi ovens or speed ovens
