Full Job Description:

Oni Sushi is looking for an energetic and reliable Hot Kitchen Line Cook and Prep to join our back of house team. This position focuses entirely on our hot kitchen station and food prep. You will not be making sushi. You will handle grill items, operate deep fryers for tempura, assemble hot bento boxes, and keep prep stations ready.

Job Responsibilities:

• Grill meats, chicken, and vegetables for teriyaki dishes and hot entrees
• Operate commercial deep fryers to prepare tempura, katsu, and hot appetizers
• Cook, assemble, and plate complete bento boxes and hot combo meals
• Prepare daily ingredients such as slicing vegetables, mixing tempura batter, and marinating proteins
• Maintain clean grills, fryers, work tables, and kitchen equipment throughout shifts
• Follow food safety guidelines, monitor holding temperatures, and keep stations sanitized
• Restock hot line supplies and prep stations ahead of lunch and dinner rushes
• Assist with station closing, trash removal, and kitchen breakdown

Qualifications:

• Previous line cook, grill, fryer, or food prep experience preferred but not required
• Comfort working around open heat, commercial grills, and hot oil fryers
• Ability to work well under pressure in a fast paced team environment
• Reliable transportation and punctual attendance
• California Food Handler Card or ability to get one within 30 days of hire
• Ability to stand for long periods and lift up to 40 pounds
