- Conduct regular physical inventory and stock counts across all three restaurants.

- Prepare and analyse food-cost reports and monitor food-cost percentages against targets.
- Analyse purchase-price variances and identify significant changes in supplier pricing.
- Monitor and document transfers between outlets, ensuring all movements are properly recorded in the system.
- Analyse wastage, spoilage, staff meals, complimentary items, and other stock adjustments.
- Monitor theoretical versus actual consumption and investigate significant variances.
- Review inventory movements and identify potential control weaknesses, errors, or irregularities.
- Ensure all inventory transactions are accurately recorded in the restaurant operating/POS system.
- Work closely with Procurement, Finance, Restaurant Management, and Operations to resolve inventory and costing discrepancies.
- Prepare regular inventory, variance, food-cost, and management reports.
- Maintain proper documentation and records to support internal controls and audits.
- Assist management in implementing measures to reduce food costs, wastage, stock losses, and unnecessary purchasing.
- Conduct periodic spot checks and surprise stock counts where required.
Independence & Internal Control
The Cost Controller must operate independently from the kitchen function.
The position should provide an objective and independent review of inventory and food-cost performance. The Head Chef and kitchen team should not be responsible for independently verifying or approving their own inventory results, consumption figures, or food-cost performance.
The Cost Controller will therefore be expected to independently verify stock, analyse variances, and report findings directly to the appropriate management/finance authority.
Required Qualifications & Experience
- Diploma or Bachelor's degree in Accounting, Finance, Cost Control, or a related field is preferred.
- Minimum 3–5 years' relevant experience in restaurant/F&B cost control or inventory control.
- Experience managing inventory and food costs for multiple restaurant outlets is highly preferred.
- Strong practical knowledge of restaurant inventory/POS operating systems.
- Experience with recipe costing, food-cost analysis, stock reconciliation, and variance analysis.
- Good knowledge of purchasing, receiving, stock movement, and inventory procedures.
- Strong Excel skills and ability to prepare and analyse reports.
- Excellent numerical and analytical skills.
- High attention to detail and accuracy.
- Strong communication and reporting skills.
- Ability to work independently and challenge discrepancies professionally.
- High level of integrity and confidentiality.
Preferred Candidate Profile
The ideal candidate should be someone who is hands-on, analytical, independent, and commercially aware, with practical restaurant cost-control experience rather than purely accounting or warehouse experience.
Experience covering three or more restaurant outlets and familiarity with restaurant operating systems will be a strong advantage.
Key Performance Areas
The successful candidate will be measured on:
- Accuracy of inventory records
- Timely completion of stock counts
- Reduction and control of unexplained stock variances
- Accuracy of recipe costing
- Food-cost monitoring and reporting
- Control of wastage and stock losses
- Accuracy of inter-outlet transfers
- Identification of theoretical versus actual consumption variances
