About the role

We are looking for a Croissant Baker to join our team. You will prepare and produce croissants and other laminated pastries according to recipes and standards, taking pride in consistency, quality, cleanliness, and proper production processes.

Key responsibilities

• Prepare and produce croissants and other laminated pastries according to recipes and standards
• Handle the complete lamination process, including dough preparation, butter preparation and incorporation, lamination and folds, cutting and shaping, proofing, egg washing, and baking
• Maintain consistent product quality, size, shape, layers, texture, and bake
• Monitor dough temperature, fermentation, proofing, and production timing
• Follow production schedules and prioritize café partner and daily orders
• Properly store and handle ingredients and finished products
• Maintain cleanliness and organization of the workstation and equipment
• Monitor ingredient and packaging requirements and communicate shortages early
• Record and communicate production issues, rejects, and wastage
• Work closely with other bakers to maintain consistent production standards

About you

• Previous professional bakery experience
• Hands-on croissant / viennoiserie experience
• Knowledge of laminated dough production
• Ability to work in a fast-paced production environment
• Understands proper lamination technique and fermentation
• Can consistently produce high-quality croissants in a production environment
• Good attention to detail
• Understands the importance of temperature, timing, and consistency
• Can follow recipes and standardized procedures accurately
• Organized and keeps a clean workstation
