What You'll Do

• Prepare and plate dishes with live, premium seafood and meats
• Engage customers directly — help them choose, tell the story, make it memorable
• Collaborate on daily specials and menu development with senior chefs
• Keep kitchen operations tight: clean, efficient, well-organised
• Get involved in wholesale planning, ordering, and prep alongside service

What We're Looking For

• 4+ years in a restaurant or hotel kitchen; seafood knowledge is a genuine advantage
• Comfortable with live seafood and equally comfortable with people
• Willing to move between front and back of house without ego
• Someone who sees a fast-paced day as a feature, not a problem
• Ready to commit — not just to the hours, but to the direction
