About the role

Vanta Private Members Club is seeking a highly skilled and artistic Chef to lead the dim sum program within our luxury dining setting. This role is responsible for crafting exquisite, handcrafted dim sum that balances traditional Cantonese mastery with modern culinary elegance for our exclusive operation.

Key responsibilities

• Handcraft a daily menu of premium dim sum, including delicate doughs, intricate wrappers, luxury fillings (e.g., caviar, truffle, abalone, king crab), and precision steaming/searing techniques.
• Develop seasonal, bespoke dim sum menus and off-menu requests tailored to private dining events and member preferences.
• Maintain exacting standards for visual presentation, texture, flavour profile, and portion control across all service periods.
• Oversee the dim sum station, manage raw ingredient prep, control food waste, and adhere strictly to high hygiene, safety, and inventory standards.
• Collaborate with the Executive Chef and front-of-house team to deliver personalized dining experiences matching the standards of an elite private club.

About you

• Proven experience as a Dim Sum Chef or Senior Chef de Partie in a Michelin-starred, luxury hotel, or high-end private club setting.
• Expert mastery of intricate wrapper techniques (Har gow crystal skins, xiao long bao pleating, puff pastries, and delicate dough work).
• Deep understanding of high-grade ingredients and fine dining presentation standards.
• Strong discipline, efficiency under pressure, and keen attention to detail.
• Relevant culinary degree or professional certification preferred.
