Dishwasher

Purpose
To maintain the cleanliness and sanitation of all kitchen dish areas, equipment, utensils, and serviceware in order to support efficient operations and deliver an exceptional guest experience. FRCG requires dedication from all Team Members to ensure high standards of cleanliness, safety, and service.

Key Responsibilities

• Inspect and verify that the dish machine is functioning properly and that chemical levels are maintained throughout the shift
• Scrape and rinse food from dishes, and properly load and operate dishwashing equipment
• Wash, sanitize, and properly store all utensils, glassware, and dishware
• Clean pots, pans, and cooking equipment by hand using proper warewashing procedures
• Sort, remove, and dispose of trash and garbage in designated areas
• Maintain cleanliness and organization of the dish area and surrounding workspaces
• Sort, stock, and organize clean glassware, utensils, and dishware
• Change dish machine chemicals, water, and maintain the three-compartment sink as needed
• Support team efficiency by maintaining a steady flow of clean items for kitchen and service staff
• Contribute to a positive guest experience by ensuring cleanliness and supporting timely service

Additional Duties

• Clean, sanitize, and mop various areas of the kitchen and restaurant (e.g., tables, walls, refrigerators, floors)
• Work closely and communicate effectively with BOH and FOH Team Members in a fast-paced environment
• Complete all assigned cleaning tasks and side work as directed by management

Physical Requirements

• Ability to stand and walk for extended periods (100%)
• Ability to work at approximately 36-inch work surfaces and reach within that range (75%)
• Ability to reach overhead, bend, stoop, and wipe (75%)
• Ability to safely use cleaning chemicals in accordance with safety standards (75%)
• Ability to work continuously at a fast pace while maintaining quality and efficiency (60%)
• Flexibility to perform additional tasks as assigned by management (20%)
• Ability to lift and carry items up to 50 pounds for distances of approximately 20 feet, occasionally involving stairs; lifting belt required (15%)

Essential Training Requirements

• Successful completion of all required training, including follow shifts, demonstrations, training materials, and assigned videos

Qualifications

• Must be at least 18 years old to operate designated equipment, or as required by state and local regulations
• Ability to work in a team environment and maintain a positive attitude
• Ability to stay organized and perform effectively in a fast-paced setting
