The Role

As Executive Chef, you will lead the creation and running of a fine dining kitchen held to the highest standards. Working with the owners and our Concept Chef, you'll shape a signature menu, build an exceptional culinary team, and set the standard of precision and artistry for every dish.

What You'll Do

Develop a signature fine dining menu across wok, hand-crafted dim sum, siu mei, and banquet and private dining offerings

Provide input on kitchen layout and equipment with the design team

Recruit, train, and lead a kitchen team of about 30, including section heads for Dim Sum, Siu Mei, Wok, and Butchery

Set recipes, plating and presentation standards, ingredient specifications, food costing, and kitchen SOPs

Uphold rigorous food safety, sanitation, and permit compliance

Lead menu tastings, pre-opening trials, and mock service to deliver a flawless, consistent launch

What You Bring

Extensive experience in Cantonese or premium Chinese cuisine, including several years as Executive or Head Chef in fine dining, luxury hotel, or high-end restaurants

Strong command of at least one specialty (dim sum, siu mei, or wok), and working knowledge of all three

Experience opening a fine dining restaurant or leading a major kitchen setup is a strong advantage

Proven ability to build, train, and retain a highly skilled culinary team

Solid grasp of food cost, inventory, and kitchen financials

Open to local and international candidates (Bilingual: English and Mandarin)
