Job Summary

We are looking for a Diploma / B.Tech. Food Technology professional with 1–2 years of hands-on experience in Noodle Manufacturing to manage and monitor day-to-day noodle production activities, process parameters, product quality and production efficiency.

Key Responsibilities

• Monitor the complete noodle manufacturing process from raw material preparation to finished product packing.
• Handle and monitor flour/raw material preparation, mixing, dough preparation, sheeting, rolling, slitting/cutting, steaming, drying/frying, cooling and packing processes.
• Monitor critical process parameters at each stage to ensure consistent noodle quality.
• Ensure proper dough consistency, sheet thickness, noodle width, strand quality, steaming conditions, moisture and drying/frying parameters as per product specifications.
• Monitor noodle weight, length, appearance, texture, colour, moisture and other quality parameters during production.
• Ensure correct seasoning/flavour application and formulation as per approved product specifications, wherever applicable.
• Monitor production line performance and minimize breakage, wastage, rework and process losses.
• Ensure proper operation and coordination of noodle processing, frying/drying and packing lines.
• Coordinate with Quality, Maintenance, Stores and Packing teams to ensure uninterrupted production.
• Maintain batch records, production reports, process parameter records and daily production MIS.
• Ensure compliance with GMP, hygiene, sanitation, food safety and SOP requirements on the noodle production floor.
• Identify process deviations, quality issues and machine-related problems and coordinate corrective action with the concerned teams.
• Assist in new noodle product trials, recipe/formulation trials and process optimization.
• Monitor production against the daily plan and support improvement in line efficiency, yield and productivity.
• Ensure proper cleaning and sanitation of noodle processing equipment and production areas as per SOP.
• Support FSSAI, HACCP, internal and external audits and ensure required production documentation is maintained.

Required Skills

• Strong practical knowledge of Noodle Manufacturing Process.
• Hands-on exposure to noodle production lines and processing equipment.
• Knowledge of dough preparation, sheeting, cutting/slitting, steaming, drying/frying and packing.
• Understanding of noodle quality parameters and process controls.
• Knowledge of GMP, HACCP, food safety and hygiene practices.
• Good production documentation and MS Excel/MIS skills.
• Ability to troubleshoot basic process and production issues.
• Good coordination and communication skills.
• Willingness to work in shifts and on the production shop floor.

Qualification

Diploma / B.Tech. in Food Technology / Food Processing / Food Science or relevant qualification.

Experience Requirement

1–2 years of relevant experience in a Noodle Manufacturing Plant is preferred/required.

Pay: ₹18,000.00 - ₹25,000.00 per month
