Coimbra Confectionery is looking for an exceptional Executive Pastry Chef to lead our high-volume, FSA-accredited central production facility in Claremont, Cape Town.

This is a senior leadership role for a commercially minded pastry professional who can combine creativity, technical excellence, and large-scale production expertise.

THE ROLE

• Lead commercial R&D, product innovation & recipe development
• Drive high-volume production, forecasting, yields & food costs
• Own quality, food safety, hygiene & FSA compliance
• Lead, mentor & develop a high-performing pastry team
• Scale premium products for wholesale & retail markets

WE’RE LOOKING FOR

• 5–8+ years senior pastry/culinary management experience
• High-volume central production or commercial bakery experience
• Expertise in artisan baking, confectionery & laminated doughs
• Advanced Diploma in Patisserie / Culinary Arts
• Experience with ERP, costing & production systems
• Strong commercial and leadership mindset
