F&B Controller

Job Summary:

The F&B Controller will be responsible for monitoring food and beverage costs, controlling inventory, analysing consumption, and ensuring efficient cost management across all restaurants, bars, kitchens, and other F&B operations.

Key Responsibilities

• Monitor food and beverage costs, consumption, and operational expenses.
• Prepare daily, weekly, and monthly cost reports and MIS.
• Conduct regular inventory checks and physical stock audits.
• Analyse food costs, beverage costs, wastage, and variances.
• Monitor purchase prices, vendor rates, and adherence to approved budgets.
• Coordinate with the Executive Chef, F&B Operations, Stores, Purchase, and Finance teams.
• Ensure proper control over stock receipts, issues, transfers, and consumption.
• Verify recipe costing, portion control, and menu profitability.
• Identify cost-saving opportunities and recommend corrective actions.
• Ensure compliance with company policies, SOPs, and audit requirements.

Job Expectations Strong knowledge of food and beverage costing, inventory management, and stock audits.

Minimum Qualification Bachelor's degree in Hotel Management, Finance, Commerce, or a related field.

Minimum Job Experience 5–8 years of relevant experience in F&B cost control
