F&B Manager

About the role

We are looking for an experienced and dynamic F&B Manager to oversee the day-to-day operations of our three outlets. You will be responsible for ensuring smooth and profitable outlet operations while delivering consistently high standards of food quality, service, guest experience, and hospitality. Working closely with the hotel management and culinary teams, you will lead and develop the F&B team, drive outlet performance, manage costs and resources, and ensure each outlet maintains its own identity while operating in line with the hotel's overall standards.

Key responsibilities

• Oversee the daily operations of Saga Bar, Vernacular Coffee, and Hathaway, ensuring smooth and efficient service
• Lead, coach, and motivate the F&B team to deliver consistently high standards of service and guest experience
• Manage manpower planning, staff deployment, scheduling, and operational coverage across all three outlets
• Ensure outlets consistently meet established standards for food quality, beverage quality, service, cleanliness, and presentation
• Monitor outlet performance, revenue, and key operational targets, identifying opportunities to improve profitability and business performance
• Manage food, beverage, labour, and operating costs while maintaining appropriate quality and service standards
• Monitor inventory levels, stock usage, wastage, and stock control procedures to minimise unnecessary costs and losses
• Work closely with the culinary team to ensure menu items, recipes, portioning, and presentation are consistently maintained
• Ensure compliance with food safety, hygiene, workplace safety, and hotel operational standards
• Handle guest feedback, complaints, and service recovery professionally and effectively

About you

• Previous experience in an F&B Manager, Assistant F&B Manager, or similar management role, preferably within a hotel or multi-outlet environment
• Experience managing multiple F&B concepts or outlets is highly preferred
• Strong knowledge of restaurant, bar, café, and hospitality operations
• Good understanding of food and beverage cost control, inventory management, labour planning, and outlet profitability
• Strong leadership and people management skills, with the ability to motivate and develop a diverse team
• Excellent communication and interpersonal skills
• Strong commercial awareness with the ability to identify opportunities to increase revenue and improve profitability
• Guest-focused with a genuine passion for delivering memorable hospitality experiences
• Organised, hands-on, and able to manage multiple priorities in a fast-paced environment
• Strong problem-solving and decision-making skills
