Experienced Fish Fillet Cutter:

• Perform precise filleting, trimming, and deboning of seafood according to quality standards.
• Maintain cleanliness, safety, and hygiene in the workplace.
• Manage tools and equipment used in seafood processing.
• Work in a fast‑paced environment with attention to detail and production targets.
• Physical stamina for standing and manual labor.
• Prior seafood processing experience is a plus.
• Location: On‑site at the Mobile, AL facility.

Key Responsibilities:

• Clean, fillet, and portion fish and seafood according to specified standards and client preferences.
• Maintain strict adherence to food safety protocols and sanitation guidelines during all stages of preparation.
• Collaborate with team members to meet daily production goals while maintaining quality standards.
• Follow all health regulations and safety procedures to ensure a safe working environment.

Required Experience & Skills:

• Proven experience in fish cutting, including high-volume filleting and trimming.
• Strong knife skills for efficiently filleting, deboning, and portioning seafood products.
• Knowledge of food safety standards and proper food handling techniques.
• Prior kitchen or culinary experience is highly desirable.
• Ability to work quickly and accurately in a fast-paced environment.
• Excellent attention to detail and commitment to cleanliness and hygiene.
