Food and Beverage Manager

Overview
We are looking for a confident, hands-on Food & Beverage Manager to lead and shape the guest experience across Marwell Hotel Winchester’s dining and events spaces. With one restaurant, a main bar, two function bars, and two wedding suites, this role is central to delivering consistent, high-quality service across both leisure and event-driven business.

The hotel is currently undergoing a period of refurbishment and transition, making this a key role in resetting standards and building a strong operational foundation. A major focus will be on mentoring, training, and developing the team to ensure consistency, confidence, and accountability across all areas.

You will take full ownership of the food and beverage operation, driving standards, improving performance, and building a capable, well-trained team. This is a key leadership role within the hotel, focused on elevating the guest journey while ensuring commercial control and operational discipline.

Responsibilities

• Lead the day-to-day food and beverage operation across the restaurant, main bar, function bars, and wedding suites
• Ensure smooth delivery of weddings, conferences, and events, working closely with the sales and events teams
• Drive service standards across all outlets, creating a consistent and high-quality guest experience
• Take ownership of team training, coaching, and mentoring to embed clear standards and ways of working
• Oversee food preparation, presentation, and service delivery in collaboration with the kitchen team
• Maintain strong control of labour, cost of sales, and stock to protect profitability
• Implement and maintain food safety and hygiene standards in line with UK regulations
• Recruit, train, and develop team members, building a motivated and accountable team culture
• Lead by example on the floor, especially during peak service and key events
• Manage rotas, staffing levels, and productivity to match business demand
• Work closely with the General Manager and senior team to support the hotel’s wider commercial and operational goals

Skills & Experience

• Proven experience in a Food & Beverage leadership role within a hotel or busy hospitality environment
• Strong background in restaurant and bar operations, with experience in events and weddings highly desirable
• Solid understanding of food safety, compliance, and operational best practices
• Commercial awareness with the ability to manage costs, drive revenue, and improve margins
• Strong focus on team development, with a track record of training, mentoring, and improving performance
• Confident, hands-on leadership style with the ability to set clear expectations and follow through
• Excellent organisational and communication skills
• Ability to work in a fast-paced, changing environment, particularly during refurbishment or transition periods

Pay: £29,000.00-£31,000.00 per year
