Floor Manager / Service Manager — New Upscale Italian Concept (Dallas)

We're opening a new upscale Italian restaurant and cocktail bar on SMU Boulevard this fall — elevated New York style pizza and Italian menu, a serious cocktail program, a designed dining room and patio, and a late-night bar and slice window running until 2am Thursday through Saturday. We're hiring the founding Floor Manager to help us build it from the ground up.

This is a leadership position reporting to the General Manager and Operating Partner, working alongside the AGM. You are our opener, the standards-holder for daytime and dinner service, and the person who makes sure the dining room hits the same mark on a Wednesday as on a Saturday. What you'll own:

• Opening the building daily and setting the room for service
• Dinner service leadership: hospitality standards, table touches, guest recovery
• Restaurant operating cost management: linens, dish, chemical, printing, small equipment, uniforms
• Host, server assistant, and food runner scheduling
• Front-of-house training program execution — you certify every server before they solo a section
• Reservation book management and guest experience quality

What you'll earn:

• $65,000 – $75,000 base depending on experience
• Performance bonus tied to operating cost control and guest experience metrics

What we need from you:

• 2+ years of restaurant management experience, upscale or high volume preferred
• Real hospitality instincts — you notice the guest before they ask, and you set that standard for your team
• Comfort with the shift shape of a new opening: long hours through the launch, including late nights and weekends when the whole team is in
• TABC certification and food safety experience
• An opener's personality: the standards, the checklists, the discipline to set the room up for someone else to succeed on
• Leadership presence: warm with guests, direct with team, calm under pressure

Pay: $65,000.00 - $75,000.00 per year
