What they need

Situated in the heart of Soho, Osteria Vibrato delivers pan-regional Italian cuisine crafted with deep respect for Italy’s diverse culinary traditions. In under six months, we earned a place in the National Restaurant Awards Top 100 in the UK.

Our food is supported by an ambitious beverage program featuring a deep wine list alongside a curated bar menu serving some of the coolest, most meticulously executed classic cocktails in London.

Above all, exceptional hospitality is our calling card and primary mission. Warmth and generosity, always.

Position Overview

We are seeking a hands-on, high-caliber General Manager to lead our Front of House operations, reporting directly to our two Founders. Osteria Vibrato operates with a tight-knit team structure where leadership happens directly on the floor: the Founders, Head Chef, and General Manager all work active service shifts together.

Working an average 48-hour week, your role will blend dedicated office administration time with an average of 4 to 5 active floor services per week—whether welcoming guests at the door, orchestrating service, or running a section .

The core mandate is to "tighten the screws" operationally, introducing robust Standard Operating Procedures (SOPs) that create consistency, efficiency, and headspace for the team. By embedding flawless systems, we will unlock valuable time to invest in learning, development, and building a healthy company culture.

Key Responsibilities

1. Floor Presence & Guest Relations

Maintain a strong, reassuring presence across an average of 4 to 5 floor services per week, ensuring service runs seamlessly.

Work actively alongside the team, leading by example at the door, orchestrating service flow, or running a section as needed.

Recruit, train, schedule, and mentor the FOH team to build a warm, highly intuitive, and guest-centric service culture.

2. SOP Systems, Culture & L&D

Utilize dedicated administration shifts to manage daily operational controls using SevenRooms and Lightspeed, optimizing cover counts, table turns, and guest profiles.

Develop, implement, and audit FOH Standard Operating Procedures to eliminate operational friction and streamline shift execution.

Frame SOPs as tools for empowerment: well-executed systems create the time and headspace needed for staff training, professional development, and a supportive workplace culture.

Coordinate with the Head Chef to ensure BOH-to-FOH alignment and flawless kitchen-to-table timing.

3. Financial & Administrative Oversight

Report directly to the Founders who will stipulate FOH operational performance, labour targets, and service standards.

Efficiently manage administrative duties, including scheduling, labour cost control, and daily reporting within designated admin time.

Work with Founders to ensure full compliance with UK labor laws, health & safety regulations, and licensing requirements.

Qualifications & Requirements

Experience: Minimum 5 years of senior management experience in high-performing hospitality brands.

Working Pattern: Comfortable with a structured 48-hour working week split between dedicated admin shifts and 4–5 active floor services.

Guest Relations & Floor Leadership: Strong, visible floor presence with exceptional interpersonal skills and guest sensitivity.

Tech Proficiency: Solid, working understanding of SevenRooms, Lightspeed POS and Google Suite tools or similar.

Hands-On Approach: Genuine passion for active floor leadership, host duties, and side-by-side service alongside your team.

Systems & Culture Mindset: Demonstrated ability to implement SOPs that free up time for team learning, mentorship, and culture building.

Pay: £60,000.00-£70,000.00 per year

Benefits:

  • Employee discount
  • Sick pay
