£34,000–£38,000 + tronc + half-yearly bonus

Quercus is an independent bistro group in Wiltshire, and we’re growing. Our Royal Wootton Bassett site on the High Street is the heart of the business. We’re looking for a General Manager to run it as if it were their own.

We cook properly, we look after our regulars, and we run a tight, well-supported operation. Menus are designed centrally and our production kitchen supports the site, so you can focus on your team, your guests and your numbers instead of reinventing the wheel every week.

What you’ll do

• Lead the whole site: front of house, kitchen relationship, standards and atmosphere, from coffee-led weekday lunches to busy weekend services
• Own your P&L, including sales, GP, labour and controllables, and use the numbers to make decisions
• Recruit, train and keep a team people want to stay in
• Keep compliance tight: licensing, food safety, health and safety, cash
• Grow the site’s local reputation and repeat trade

What you’ll bring

• Experience as a GM or strong Assistant GM in quality food-led hospitality
• Commercial confidence: you know what drives GP and labour and you act on it
• A calm, organised leadership style and high standards you hold consistently
• Personal licence holder
