The Role:
We're looking for a hands-on, people-focused General Manager to take the lead across our two London venues in Haggerston and Tooting.
This is a great opportunity for an ambitious Assistant General Manager ready to take the next step, or an existing General Manager looking for something a little different. If you love hospitality, thrive in a busy events environment and know how to get the best out of your team, we'd love to hear from you.
You'll be responsible for the overall performance of both venues, leading a team of around 30 people, supported by an Assistant General Manager, Head Baker and Shift Managers.
You'll have the support of an experienced on-site management team, along with our Head of Operations and central teams, while having plenty of opportunity to bring your own ideas and make the role your own.
You'll take ownership of everything from team development and guest experience to revenue performance and operational standards. You'll also work closely with our central marketing, sales and operations teams to deliver events, spot new opportunities and help our London venues continue to develop.
You'll balance the big picture with the day-to-day details: confident working towards targets and driving results, but equally happy rolling up your sleeves and getting stuck in when things get busy.
What You'll Be Doing:
Leading & Developing Your Team:
● Lead, motivate and develop a team of around 30 across both London venues, creating a positive, supportive and high-performing working environment.
● Work closely with your Assistant General Manager, Head Baker and Shift Managers to ensure both sites are running at their best.
● Take ownership of recruitment, onboarding, training and ongoing team development.
● Coach and support your management team, helping them grow in confidence, take ownership and progress in their roles.
● Manage performance, conduct reviews and address any people matters fairly and professionally.
● Lead by example, bringing energy, enthusiasm and a hands-on approach to everything you do.
Operations & Guest Experience:
● Oversee the day-to-day operations of both venues, ensuring events run smoothly and consistently deliver the five-star experience we're known for.
● Maintain excellent standards across our baking tents, bars and guest spaces.
● Manage staffing levels, rotas and resources to meet business demand.
● Oversee supplier relationships, stock management, ordering and venue maintenance.
● Ensure both sites meet the highest standards of health and safety, food hygiene and operational compliance.
● Take ownership of guest feedback and resolve any issues quickly and professionally.
● Continuously look for ways to improve our operations, guest experience and overall efficiency.
Commercial Performance:
● Drive the performance of both venues, including sales, bar revenue, labour and stock control.
● Work towards monthly revenue and performance targets, identifying opportunities to improve results.
● Keep costs on track and provide regular performance updates to the Head of Operations and business owners.
● Work closely with our sales and marketing teams to support private bookings, corporate events and brand activations.
● Bring fresh ideas and a proactive approach to helping our London venues stand out.
What We're Looking For:
We want someone who brings a great mix of people skills, operational experience and commercial awareness. You'll have:
● Experience as a General Manager or strong Assistant General Manager within hospitality, events, leisure or a similar fast-paced environment
● Experience leading, motivating and developing teams, with the confidence to support and guide supervisors and other team leaders
● Commercial awareness and confidence working with targets, costs and stock
● Excellent organisational skills and the ability to confidently manage multiple priorities
● A proactive, solutions-focused approach, with the confidence to make decisions and take ownership
● A genuine passion for delivering outstanding customer experiences
● The flexibility to work evenings and weekends as part of a hands-on management role
It would be a bonus if you also have:
● Experience managing budgets
● Experience managing more than one venue
And don't worry, you don't need to be an expert baker! We're much more interested in finding a brilliant leader who shares our passion for people, hospitality and creating memorable experiences.
Our Baking Promise to You:
At The Big Bakes, our team's happiness is the icing on the cake! We work hard, have plenty of fun along the way and believe in recognising the people who make it all happen. Here's what you can look forward to:
● 30 days' holiday per year, including your birthday off!
● Christmas Eve, Christmas Day, Boxing Day and New Year's Eve off
● A free Big Bakes experience for four after completing your probation
● 50% off food and drinks at our venues
● 50% staff discount on up to six additional tickets per year
● £150 referral bonus for introducing a hospitality team member and £250 for a baking team member
● 24/7 counselling, legal and financial support through our Employee Support Programme
