What they need
Sous Chef (In charge) - British & Pan Asian Cuisine
Role Overview
We are looking for a passionate, skilled, and energetic Grill Chef to join our culinary team. In this role, you will be responsible for preparing, seasoning, and grilling high-quality proteins, seafood, and fresh vegetables to perfection. Whether operating on our busy live Teppanyaki iron griddles or managing the hot line in the kitchen, you will deliver exceptional culinary consistency, speed, and showmanship.
Key Responsibilities
- Grill Execution: Expertly grill a wide range of meats (rib-eye, lamb, chicken), seafood (king prawns, scallops, seabass, lobster tails), and fresh vegetables, ensuring precise cooking temperatures and authentic flavor profiles.
- Mise en Place & Prep: Prepare marinades, sauces (Teriyaki, Tokyo Cream, Hot Garlic, Sweet Plum), seasoned rice, and prepped ingredients ahead of peak services.
- Stock & Portion Control: Work closely with the Sous Chef and Head Chef to monitor stock freshness, control food waste, and maintain correct portion sizes to achieve target gross profit (GP) margins.
- Food Safety & Hygiene: Strictly adhere to UK Food Safety regulations, HACCP protocols, temperature logging, and Natasha’s Law allergen management.
- Cleanliness & Maintenance: Clean, season, and maintain iron griddles, extraction systems, prep stations, and tools throughout and at the end of each shift.
- Team Collaboration: Work seamlessly with the sushi chefs, line cooks, and front-of-house staff to ensure efficient service pacing, especially during staggered waves and busy weekend seatings.
Requirements & Qualifications
- Proven experience as a Grill Chef, Line Cook, or Teppanyaki Chef (experience in Japanese or Pan-Asian cuisine is strongly preferred).
- Strong working knowledge of meat/seafood temperatures, butchery cuts, and high-heat iron griddle / char-grill cooking.
- Confident, customer-facing personality with a flair for live cooking and showmanship (training can be provided for enthusiastic grill chefs looking to develop full Teppanyaki theatrics).
- Technical knowledge of ingredient handling, prep speed, and strict portion control.
- Valid certification in Food Safety & Hygiene (Level 2 or above preferred) and sound understanding of HACCP.
- Ability to stay calm, focused, and efficient in a fast-paced, high-volume kitchen environment.
- Legal eligibility to live and work in the UK.
What We Offer
- Competitive salary.
- Comprehensive training on our signature menus, knife skills, and Teppanyaki entertainment techniques.
- Free staff meals while on duty.
- Staff discounts.
- Clear career progression opportunities within our growing hospitality group.
Job Type: Full-time
